It can be described as fruity and earthy, combining notes of berry, grapefruit, and apricot, with pronounced aromas of pine and resin. Simcoe can find a place in most hoppy-style beers, both as a bittering hop and as a late addition, and is a staple hop in some of the most revered West Coast IPAs.
